Long time no post

I was distracted. Sorry.

The spring veggies are starting to show up in the market. Fiddleheads, pea vines, fava beans. This is a good time of year to be a cook. I can't wait for the cherries this summer. Salmon-mania should be starting in another few weeks with the copper river and yukon runs.

i'm working on a garlic bagel recipe which has great potential - i just have to work out some moisture issues, so it's still in beta. (ooh! just got an idea how to deal with that!)

somebody, i forget whom, was giving me a hard time about not doing a turducken special at sestos.
i really don't think that western avenue is ready for the statistical density of a real turducken, but i promise that between thanksgiving and christmas i'll do at least one special which will contain turkey, duck, and chicken. i've got a couple of ideas, and i'll try them out this holiday weekend while we're closed.
i need to start baking pies - winter is pie season.

this past week was a crazy one. thanks to everyone who helped to get rid of out extra halloween candy.
a couple of sandwiches will be changed this week: turkey, roast beef, and roast chicken, along with the mayo twins, tuna salad and chicken salad.
tollhouse cookies, scones, and the usual bagel suspects in the pastry case on monday.
chili and chicken and sausage gumbo for sure on monday - not sure what soup i'll make yet. i usually decide after christy gets on my case around 7 in the morning. she likes to have her sign done early.

it's been a quiet week on western avenue. our hours have been a little sketchy due to various doctor's appointments and such, but we're still there.
there will be some menu changes coming online in the next week or so.
a source for incredible italian-style bread pretty much fell into my lap, so some of the sandwiches will be changing. one of the salads has to go - there are two, inherited from the old menu, that i really don't care for, and i'm watching the sales figures to see which one is the slowest-moving. i have a replacement in mind: it has salmon, and is asian-inspired.
no major changes are planned for breakfast, but some additions might show up.

oatmeal/raisin/cranberry cookies are making the rounds and chicken sauce piquante is on deck for this friday's cajun special, along with the ever-popular meatloaf sandwich. i need to make gumbo again, and soon.
